Houston, we have a problem! Seriously, I can’t stop eating this stuff! No sooner had I taken the lid off my mini food prep and I had a spoon in there taking mouthfuls. It’s just so good! I love a good dairy-free pesto because if you want cheese you can add it on top of everything just as easily. You’d think I’d be sick of pepitas after the Ultimate Reset but it has only exacerbated my obsession.
Go make this!
1/4 cup toasted pepitas
1/2 cup packed fresh basil leaves
1/2 cup packed fresh flat-leaf parsley leaves
Juice of one lemon
2 tablespoons water
1/4 teaspoon sea salt
1/4 cup extra virgin olive oil
This couldn’t be any easier — put everything in a mini food prep, blender or full-sized food processor and blend scraping down the sides as necessary. Voila! Pesto!
