A school holiday for the kids meant that I had less time to organize my meals, but luckily I’m getting pretty fast at whipping together the Microgreen Salad! It was a gorgeous summer in October day spent at the beach with the kids and some friends and as far as I’m concerned, any day spent outside is a banner day.
I have to admit, the breakfast and dinner meals were not among my favorites. I had high hopes for the dinner but it kind of fell flat. I am not sure if I didn’t cook the squash correctly but it was just not satisfying. Highlight of my day? The Chocolate Covered Strawberry Shakeology of course! I’m pretty sure that’s going to be a repeat for tomorrow.
Here are a couple observations I’ve made so far:
- I don’t need animal protein at every meal, or every day for that matter.
- I don’t need to be refueling with snacks all the time if I am eating three nutrient-dense meals a day.
- I really do miss coffee. I can live without the caffeine but the morning ritual is just something I’ve gotta have. T-7 days until it makes its way back into my life again.
And I have to come clean, I had a few bites of the Pumpkin Spice Chocolate Bark that is sitting in my pantry. I really just had to try it but I cut myself off after that and all is good. It’s about moderation, right?!
Here was today’s menu:
Breakfast: Steamed Spinach, Seasoned Chickpeas and Nori Gomasio
Lunch: Microgreen Salad and leftover Mediterranean Roasted Beets
Optional Snack: Chocolate Covered Strawberry Shakeology (winner!!!)
Dinner: Kabocha Squash with Garlic-Tahini Filling and Riced Broccoli
