Ok, I wanted to get this recipe up before I bolt town for a few days for a Leadership Retreat in Orlando, Florida. I made this last night HOPING I could get the kids to eat it. In the past year I have made the gradual shift into one dinner for all – hallelujah! Gone are the days with a 5pm kiddie dinner and an 8pm adult dinner. I mean, my kids are now 6 and 8 and it’s high time they start eating like civilized human beings, off real plates, as a family. Meals have now shifted to somewhere between 6:30-7:30pm — we are just later dinner eaters over here and honestly, with all the after school crazy, this just works for us. I wasn’t sure if the kids would be down with this pork tenderloin but low and behold, they gobbled it up! This is a fab recipe I snagged from 100 Days of Real Food that should really go on your weekly roster because it takes minimal effort and we can all appreciate THAT!
Ok, I must go pack…how fast can I pack and leave my family behind?! Oops, did I just say that? I love them, I do. Time for a little R&R, inspiration and fun though!
Easy Roasted Pork Tenderloin
One 1 – 1 1/2 lb pork tenderloin
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
A couple grinds of black pepper
1 tablespoon olive oil
- Preheat oven to 425F.
- Place the pork in a small square or round baking dish (it’s ok to curl it up to make it fit).
- In a small bowl, combine the seasonings together and stir in the olive oil to make a paste. Brush all over the pork.
- Bake until the pork is cooked all the way through, about 25-30 minutes or until internal temp reads 160F.
- Slice and serve!
