Another Hemsley & Hemsley Good + Simple wonder! Sometimes vegetables can be so boring and it’s nice to have a few dips and spreads to keep them interesting (and keep you eating them!). This would be great as a dip for crudités, as a spread for a sandwich or for slathering on a burger. Within an hour of making this I tried it on two of the above and it was delicious. It DOES call for a food processor and I reluctantly brought it out but I’m pretty sure I could have done this in the Vitamix as well…NEXT TIME!
Creamy Cashew Ranch Dressing
Makes 2 cups
7 oz cashews, soaked for 3 hours
2 garlic cloves
2 tablespoons apple cider vinegar
1 tablespoon maple syrup or raw honey
1 small handful of chives, spring onions or chopped onion
1 1/4 cup water (or enough for blending to the preferred consistency)
Sea salt & black pepper
Extra Virgin olive oil, to cover.
- Drain and rinse the cashews under cold running water.
- Blend everything except the EVOO together in the food processor, adding the water slowly until the dressing is the consistency you prefer.
- Keep stored in the fridge and covered with a layer of EVOO with the lid on. Stir before serving.
I actually think you could sub cilantro or parsley (or both if you want to get crazy!) for the chives.
