I don’t know about you but getting vegetables into my kids is a daily struggle. I have one who will gladly eat a carrot stick or bell pepper but the other is quite the opposite. If it looks like a vegetable, smells like a vegetable and/or is the color green, it will not be touched and no method of bribery will sway this decision. Oddly enough, though, when it comes to juices and smoothies, this kid will guzzle them down fully knowing what I’m putting into them. I have lots of smoothie recipes to add to this blog but this is a recent favorite. It’s a great breakfast or snack that’s full of vitamins, fiber and protein.
Purple Power Smoothie
2 cups milk (dairy, nut, grain or soy)
1 frozen banana
1 cup frozen blueberries
1 handful baby spinach
1-2 teaspoons ground cinnamon
1-2 tablespoons ground flaxseed meal
1/4 cup peanut or almond butter, without any added sugar
Pour the milk into a blender and top with the remaining ingredients. Blend until creamy and smooth.
