As I’m writing this up I’m already thinking about making this for dinner again tonight. It was that good. It was clean, tasty and totally satisfying. Who knew steamed cabbage could be so good?! I found this recipe in a new cookbook of mine, Cook. Nourish. Glow. by Amelia Freer. I am usually fearful of any recipes that include “poaching” since I can’t poach an egg to save my life but this was ridiculously easy and all done in one pan. Hands in the air for easy clean-up!
Steam-Fried Cabbage with Poached Salmon
2 teaspoons coconut oil
1/2 pound white or red cabbage, shredded
2 wild salmon fillets, skin removed
zest and juice of 1/2 a lemon
1 jalapeno pepper, finely chopped & seeds removed
1 tablespoon capers, drained and rinsed
small bunch of parsley, leaves picked & chopped
sea salt and freshly ground pepper, to taste
Heat a frying pan over medium heat and put in 2 teaspoons of coconut oil and 2 tablespoons of water. Add the shredded cabbage, mix well and put the lid on for 3 minutes.
Place the salmon fillets on top of the cabbage, adding 2 more tablespoons of water if necessary. Put the lid on again for 5-6 minutes. Check occasionally to make sure the cabbage isn’t sticking to the bottom of the pan. If it is, add a bit more water.
Once the salmon is cooked, add the lemon zest and juice, jalapeño, capers and parsley to the pan. Season with salt and pepper and serve the salmon on top of the cabbage.
