Last day of Phase 2! 2/3 done! Woot! Woot! Starting tomorrow I’ll be eliminating grains and legumes to focus on a simple, cleansing fruit- and vegetable-based diet. Thankfully there are optional grains I can choose from if need be but I did see a few sweet potatoes dabbled throughout the meal plan which should keep me from feeling totally deprived. I have to say, though, all the veggie meals have been super satisfying so I don’t think this will be much of an issue.
Today I added coconut flakes to my fruit for breakfast – can we say life-changing?! Seriously guys, I know I’m grasping at straws here but I’ll take everything and anything I can get!
Breakfast: Fresh Fruit
Lunch: Microgreen Salad and Coconut-Kabocha Squash Soup (I’m going to try this soup with butternut squash post Reset – either I didn’t cook the kabocha squash right or I just don’t like it)
Optional Snack: Chocolate Vegan Shakeology with frozen strawberries & chia seeds – YUM!
Dinner: Edamame and Roasted Corn Succotash with Lemon Kale
One thing I want to emphasize about this program is how much you get to eat! It may be loaded with fruits and veggies but the portions are considerable and I often can’t finish them!
