So I’ve been reading up on the Ultimate Reset message boards that extreme irritability is common. This is exactly the excuse I need for the bitchiness that has overtaken me in the last 24 hours. It’s the weekend, I’m feeling annoyed about not being out to lunch with the rest of my family right now, I’m grumpy because I just want a glass of red wine tonight and I really would love to have some coffee and chocolate. I might have taken a couple tiny almond butter cookies to ease the pain but I see the finish line and I’m going to finish what I started! I keep reminding myself that we don’t grow when things are easy; we grow when we face challenges. I am not sure if my irritatability is because the end is near or that it’s the weekend but I’m coming for ya Day 21!!!
Breakfast: Fresh Fruit
Lunch: Spinach Salad & a Baked Sweet Potato
Optional Snack: YOU BET!!! Chocolate Vegan Shakeology
Dinner: Roasted Fennel Bulb with Lemony Broccoli and Green Beans. It was supposed to be broccoli and asparagus but I had beans from the other night to use!
We had family visiting for the day/night so while they sipped wine during a movie, I drank tea…I’m holding strong.
I made pancakes for the small army of children waking up in my house today. You might ask “why would you do that to yourself?!” but quite honestly, I’m not a pancake girl. If this were eggs, though, it would be a whole other story! Rainy fall Sundays scream for something delicious to be cooking on the stove so I made my family my No-Chop Chili and prepped my own meal so that I could get dinner on the table fast. Nothing like a plate of collards and tempeh while you sit to watch Willy Wonka and the Chocolate Factory with your kids!
Breakfast: Fresh Fruit. Someone suggested adding chia seeds to help keep you full till lunch.
Lunch: Microgreen Salad. Yes, I still love this salad.
Optional Snack: Chocolate Vegan Shakeology
Dinner: Mediterranean Roasted Beets, Baked Tempeh and Coconut Collard Greens. The beets and collard green recipes might be some of my most favorites in the whole program. I just realized as I am writing this that dinner was for a 1/2 serving of both the tempeh and collards – whoops, I think I ate full for both. Oh well.
