I’ll start by saying that I REALLY missed having fruit today. I know I’ll get my more than my fair share in weeks two and three since breakfast is always a heaping three cups of it but I was really wishing it was included in today’s menu. I may or may not have snuck in a couple raspberries and some mango…hey, could have been worse! I also struggled thinking about all the food that I couldn’t have. Not for hunger but you always want what you can’t have! Absence makes the heart grow fonder? It also made me sad that it’s Friday night and I’m not enjoying a cocktail! Wow, these food habits certainly do run deep but hopefully I can retrain my brain that the world doesn’t revolve around food over these next 18 days. 18 days seems like forever but it’ll go by quickly, right? RIGHT?!
Here is what was on today’s menu:
Breakfast: 1 slice whole-grain toast, 2 scrambled eggs (I did over easy to spice it up, crazy, I know) & 1 1/2 cups of steamed spinach with pine nuts.
Lunch: Lentil-Lime Salad & Microgreen Salad with Creamy Garlic Dressing. So many salads!
Optional Snack: Of course I had my optional snack! Chocolate Vegan Shakeology.
Dinner: Nori Rolls with Tempeh and Veggies & Japanese Cucumber Salad. There was also supposed to be miso soup with this but it was just TOO. MUCH. FOOD!
Now I’ll just hang out with my mug of tea…it’s a wild and crazy night here in the Ross house! I keep reminding myself: “Commitment is the glue that bonds us to our goals.”
