Can I get a high five for finishing up Week 1 of the Ultimate Reset?! What have I learned? I can do hard things, I can be social and NOT feel compelled to overdo it with food and drinks, I don’t mind tempeh, I don’t need snacks to fill in the gaps between meals and my daily Shakeology is my favorite part of the day. I felt no discernible highs and lows throughout the day and I didn’t find myself thinking about eating off my kid’s dinner plates during their dinner. Progress? I think YES!
Breakfast: Oatmeal with Flaxseeds & Apple and plain organic yogurt with pure maple syrup
Lunch: Zucchini-Cashew Soup & Microgreen Salad
Optional Snack: Chocolate Vegan Shakeology
Dinner: Black Beans & Rice and Kale with Pine Nuts
Now on to Phase 2. Bye-bye animal protein, dairy & eggs. Hello fruits, vegetables and whole grains!
